Dreamteam BBQ is a mobile premium catering service in Estonia and Finland. We ALWAYS cook on-site — fresh, straight off the fire, in front of your guests. Slow-smoked Black Angus brisket, Nordic salmon and a full BBQ experience. We focus on events where food is the star: birthdays, milestones, get-togethers, festivals and corporate events. Weddings only in the intimate format: up to 30 guests, private chef or small grill catering, where the fire and the cooking are the centrepiece of the evening. We do not take classic large wedding catering with a tight service window after the ceremony.
The Saga of ST Oliver and Dreamteam
The Spark
It started with a kid in the Estonian countryside, poking sticks into a campfire long after the grown-ups had gone inside. The smell of burning juniper, sausages blistering over coals, potatoes blackened in the embers — that was his first kitchen. One winter night a documentary flickered across the family TV: massive Texan offset smokers, whole briskets the size of a car hood, blue smoke rising over the pine trees like a prayer. He didn't say a word. He just knew, with the strange certainty only children have, that one day he would stand in front of one of those steel beasts himself.
Texas
Years later he was standing in the pre-dawn heat of Central Texas, post-oak smoke in his hair, sweat soaking through three shirts before sunrise. He learned the 14-hour brisket the hard way: ruined cuts, sleepless nights, pitmasters who answered every question with a grunt and a nod toward the firebox. He learned that bark is built in the first four hours, that the stall is a friend and not an enemy, that good barbecue can't be hurried and won't be faked. No injections, no crutches, no shortcuts — only fire, salt, pepper, time, and the patience to let the meat tell you when it's done.
Tokyo
From Texas he flew east. In the back-alley yakiniku counters of Tokyo and the binchotan grills of Kyoto, he learned that the blade matters as much as the flame. One clean cut against the grain can save a brisket; one careless one can ruin it. He learned the depth of dashi and koji, the patience of aged tare, the beauty of restraint — three perfect bites instead of ten loud ones. He learned to bow to his ingredients before he cooked them, and to leave a plate quieter, cleaner, more honest than he found it.
Lapland
Then he came home — not all the way home, but North, to the midnight sun and the ancient forests of Lapland. There he cooked wild salmon nailed to birch planks beside open fires, smoked reindeer shoulders under the green flicker of the aurora, foraged juniper, spruce tips and cloudberries from the same forest that fed his grandparents. The wilderness gave him what Texas and Tokyo couldn't: a place. A reason. The understanding that fire is not a technique you import, but a conversation with the land you stand on. Up there, under that sky, the chef from the Estonian countryside finally became whole.
The Unofficial Master
So why hasn't ST Oliver won MasterChef yet? The honest answer is simpler than the legend: because the judges keep refusing to let him leave the kitchen until their plates are empty, their wine glasses are refilled, and somebody has explained, one more time, exactly how that brisket got its bark. He has no televised trophy on the shelf. What he has instead is a Dreamteam — a crew of cooks, pitmasters and servers who travel from Tallinn to Helsinki to Lapland to your private dinner, your corporate day, your festival, and quietly turn an ordinary evening into the one your guests still talk about a year later. That, in the end, is the only title that matters.
